Blueberry Muffins
EEEKKK! I used the silicone rose bakeware moulds to make blueberry muffins and they turned out really well.
Blueberry Muffins
2oz/ 50g Vegetable Oil
2oz/ 50g caster sugar (approx.2 heaped tablespoons caster sugar) 1 Egg 4oz/ 100ml Milk
Whisk the vegetable oil, caster sugar, egg and milk together Fold in
5oz/ 125g Flour (plain)
1/2 Tablespoon Baking Powder
A pinch of Salt
The mixture will be lumpy that's OK don't over mix
Add the blueberries (if they are large cut in half I used organic ones they tend to be small)
100g blueberries
Heat the oven to 200C/ 400F/ Gas mark 6
Lightly oil the muffin tin moulds (I used the silicone moulds so don't need to oil) and add your mixture
Bake for 20-25 minutes or until risen and golden.
Cool on a wire rack.
These are nice served warm but are just as tasty when cold
